Mutton Rogan Josh
An Indian delight made with mutton, can be enjoyed with rice or naan.

Ingredients
2 pounds mutton, cut into small pieces
2 medium onion, chopped
2 medium tomatoes, chopped
1 tablespoon ginger paste
1 tablespoon garlic paste
1/2 tablespoon red chili powder
1 teaspoon kosher salt
1/2 teaspoon turmeric powder
1 bunch of fresh coriander
2 whole green chilies
1/4 cup olive oil
1 cup yogurt
1/2 teaspoon cumin seeds, ground 1/2 teaspoon fennel seeds, ground 1/2 teaspoon of cumin seeds
3 green cardamom pods
4 cups of water
2 tablespoons thinly sliced ginger root, to serve fresh coriander leaves, for garnish
Method
1-In a large saucepan, combine mutton, water and salt, cover with lid and cook for 1 and ½ hour on low heat or until mutton is tender.
2- Stir occasionally.
Heat oil in another large pan or skillet, add cardamom pods and cumin seeds; let them to pop.
3-Add onion and stir-fry until translucent.
4- Then, add ginger paste, garlic paste, tomatoes, red chilies, and turmeric; cook for 5 minutes.
5- Add the cooked mutton and green chilies, stir-fry for 5 minutes. Stir in yogurt; cover with lid and let cook on low flame for 10 minutes or until water has reduced.
6-When the sauce has thickened turn off heat.
7-Sprinkle ground cumin seeds, coriander seed, and fennel seeds. Mix well.
8- Transfer into serving dish, top with ginger slices and chopped fresh coriander leaves. Enjoy.
