Indian Aloo Gobi

Indian Aloo Gobi 

This flavourful dish is made with cauliflower, potatoes and Indian spices. 

Preparation time: 10 minutes
 Total Time: 40 minutes
 Yield: 6 servings 

Ingredients 

1 large cauliflower, cut into small pieces 
3 potatoes, peel and cut into cubes 
1 onion, thinly sliced 
1 teaspoon ginger paste
 1/2 teaspoon salt
 1 teaspoon garlic paste 
1/2 teaspoon turmeric powder
 1/2 teaspoon red chili powder
 1/4 cup cooking oil 
4 tablespoons of tomato paste
 1/2 teaspoon cumin seeds 
1 bunch of fresh coriander, chopped 
2 green chilies, chopped
 1/2 teaspoon cumin powder
 1/2 teaspoon cinnamon powder
 1 cup of water 
1 medium tomato, sliced for garnish 

Method 

1-Heat oil in a saucepan add cumin seeds and let them pop. 

2-Add onion slices and cook for 2-3 minutes or until onion becomes translucent. 

3-Then, add the tomato paste, garlic paste,
ginger paste, red chilli powder, turmeric powder, and salt.

4- Mix thoroughly. Add cauliflower and potatoes, cook for 5 minutes. 

5-Add 1 cup of water; cover saucepan with lid and cook for 10 minutes on low flame. 

6-Turn off heat when potatoes and cauliflower become tender. 

7-Sprinkle cumin powder, cinnamon powder and mix. 

8-Garnish with chopped green chillies, coriander and tomatoes. 

9-Serve with boiled rice or bread.
